Apple Fritters with Cider Glaze

Ingredients
  

  • 1 cup flour
  • 3 tbsp sugar
  • 1 1/2 tsp 1 1/2 teaspoons baking powder
  • 1/4 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 eggs
  • 1/2 cup buttermilk
  • 1/4 tsp vanilla extract
  • 1 tbsp butter melted
  • 2 cups firm apples (like Granny Smith, about 2 apples) peeled, cored and diced
  • Oil for frying

Instructions
 

  • In a large bowl, mix the flour, sugar, baking powder, baking soda, cinnamon and salt. In a small bowl, whisk the eggs, buttermilk, vanilla and butter. Add the wet ingredients to the dry ingredients and mix until just incorporated. Mix in the apple pieces.
  • Heat about 2-inches of oil in a large heavy pot to 350 to 360 degrees. Drop about ¼ cup of batter into the oil per fritter, working in batches, do not overcrowd the pot. Fry until golden and cooked through, about 6 minutes. Transfer to a cooling rack set over a paper towel lined baking sheet and repeat with all the batter. Serve tossed with cinnamon sugar, dusted with powdered sugar or coated in glaze.

Notes

  • For the Glaze: Combine 1 cup powdered sugar with 3 tablespoons apple cider and a pinch of salt. Adjust the amount of liquid until the glaze is your desired thickness. Drizzle over the fritters or dip each fritter while they’re still warm.
